For Valentine's Day I decided to make a special treat for my boyfriend, but I didn't want to do everything by myself so we made these together.
First we made Popcorn
Heat up 3 tsp canola oil in a large pot over medium heat and add 3-4 kernels to the pot and cover with a lid
When the kernels pop, add 1/3 cup kernels to the pot or enough to cover the bottom, and cover the pot with a lid
Take off the heat and count to 30
Turn the heat back up and gently shake the pot over the heat
Once the popcorn start popping, gently make a small opening with the lid to vent the steam (warning, you may end up with popcorn EVERYWHERE)
continue gently shaking the pot until the popping stops
or use a popcorn machine...
Then we made caramel
Melt 1 cup of butter in a small saucepan
stir in 1/2 cup brown sugar and 1/4 cup corn syrup
Let it boil without stirring for 2-4 minutes. Watch this like hawk because it can start burning really quickly
Take it off the heat, stir in 1/4 tsp baking soda and 1/2 tsp salt and 1/2 tsp vanilla
Then we poured the caramel over the popcorn
Lay out the popcorn on a shallow pan
throw it in the oven and wait
Stir the popcorn every 15 mins for 30 mins- 1hour. Take the tray and let it chill.
Tada you've just made caramel popcorn
but wait, we're not done
melt chocolate, pour them into trays and stick a piece of popcorn in each piece
Freeze in the freezer, or outside, whichever is colder.
Voila! Caramel popcorn chocolate. Enjoy
